Why Make Greek Yogurt Pancakes?

Over the past few weeks, I’ve been searching for ways to sneak protein into my diet. A pregnancy diet often requires much more protein than the average diet. Greek yogurt is known to come packed with protein. And it’s also a healthier version of your classic pancake. This delicious take on traditional pancakes is great for both breakfast or dinner. It can be made with unflavored greek yogurt, but I highly recommend using a flavor. There are so many fun flavors out there, so you can alter it to your own taste. We chose a mixture of apple pie and salted caramel yogurt. And these greek yogurt pancakes were amazing!

We like to cook up some potatoes to serve with the greek yogurt pancakes. You could also serve with fresh fruit or any other breakfast favorite you may have.

Greek Yogurt Pancakes | Bottles & Banter

Ingredients

  • 3 Large Eggs
  • 1/2 tsp. Vanilla Extract
  • 1/2 tsp. Salt
  • 1 tsp. Baking Soda
  • 1/2 cup Flour
  • 2 tbsp. Sugar
  • 1 1/2 cups Flavored Greek Yogurt
  • Butter for serving
  • Syrup or honey for serving

Instructions

  1. Mix the dry ingredients together in a small bowl
  2. In a separate large bowl, place the greek yogurt. Mix the dry ingredients into the yogurt
  3. In another bowl, whisk the eggs and vanilla together. Pour mixture over the yogurt mixture
  4. Stir everything until well combined

  1. Heat a skillet or griddle over medium low heat and coat with a small amount of butter
  2. In 1/8 – 1/4 cup portions, slowly drop batter onto the skillet.
  3. Cook until top forms bubbles and a slight golden brown color. Then flip to the other side and cook for another 2-3 minutes.
  4. Serve with butter and drizzle with syrup or honey
